• 2 slices bread of choice • 2 teaspoons whole-grain mustard, divided • 50g or 1/4 medium pear, sliced • 100g or 1/2 avocado • 2 tablespoons shredded Swiss or DF cheese
• 1/4 cup baby spinach • 3 oz turkey
Top one slice of bread with 1 teaspoon mustard, pear, avocado, and 1 tablespoon cheese. Top the other slice of bread with the remaining 1 teaspoon mustard and 1 tablespoon cheese and turkey. Toast sandwich halves face up in a toaster oven until the cheese begins to melt and bubble. Add the mixed greens to the sandwich just before serving.
