Spinach Feta Stuffed Chicken Breasts

Serves 6


For the Chicken:

  • 1 1/2 lb Chicken breast

  • 1/2  tablespoon Avocado oil

  • 1/2  teaspoon Salt

For The Spinach Stuffing:

  • 4 oz - 1/3 less-fat cream cheese

  • 1/4 cup Mozzarella cheese, shredded

  • 1/4  cup Feta cheese   

  • 2 cups Baby spinach


The estimated total time to make this recipe is 25-30 Minutes

  1. Preheat oven to 400 degrees. Spray a baking dish with cooking spray.

  2. Make the spinach stuffing: Place the cream cheese, feta, and mozzarella into a medium mixing bowl. Roughly chop the baby spinach and add it to the cheese. Massage the spinach and cheese with your hands, until well combined. Microwave for 60-90 seconds, or until cheese begins to melt together.

  3. Prep the chicken: using a sharp knife, cut a pocket in the center of each chicken breast.

  4. Brush chicken breasts with oil and season with salt. Stuff the chicken breasts evenly with the spinach stuffing in the pockets made with your knife.

  5. Bake the chicken in prepared pan for 25-30 minutes, depending on how large your breasts are (or until they reach an internal temperature of 165 degrees).

Serve with optional carb and veggies.
