Chicken alfredo?? YUMMY Definitely a fan favorite and I get questions about how to still enjoy a great chicken alfredo recipe without being guilty. Here it is, a guilt-free recipe to cater to you and your family! Add it to your plan for the week!
Ingredients:
1 (16 oz) box penne pasta - preferable Bonza or chickpea pasta
1 cup hummus
1 tablespoon fresh minced garlic
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1/2 tablespoon Italian seasoning
1/2 teaspoon pepper
3 cups oat milk
1 tablespoon fresh minced parsley
1 cup Parmesan cheese
1/2 cups mozzarella cheese
16 oz cooked chicken
Directions:
Preheat oven to 425 degrees. Spray a 9 x13 inch baking dish with cooking spray.
Prepare pasta to al dente in a large pot or Dutch oven. Drain and set aside.
In the same pot, add the hummus. Use a whisk to stir. Add minced garlic, garlic powder, onion powder, black pepper, and Italian seasoning. Whisk until mixed.
Add milk one cup at a time and continue to stir. Add one cup of parmesan cheese and stir to mix and melt. Once all the sauce is melted, stir in chicken and pasta.
Optional Step: Pour pasta into the baking pan. Top with remaining 1/2 cup of mozzarella cheese and parsley. Bake for 5-10 minutes to melt the cheese. Turn on the broiler for a couple of minutes to brown if desired. Serves 6
