Prepare quinoa based on cooking instructions by bringing one cup of water to boil and adding the 90 grams of quinoa. Reduce heat and bring to simmer for 20 minutes until the quinoa seeds open up.
Chop spinach, tomato, and cucumbers and place in a salad bowl.
Mix dressing by adding oil, lemon juice, salt, and pepper to a bowl and mix. Add to salad, and then toss in drained quinoa and raisins.
