Healthy Chicken Fried Rice

This has truly become one of my "Omg-I-don't-have-a-dinner-plan" meals. Simply keep the ingredients needed on hand and you can whip this out at anytime!


  • 4 chicken breasts of 1lb chicken

  • 4 eggs

  • 4 cups cooked rice

  • 1 cup frozen peas

  • 1 cup frozen corn

  • 1 tablespoon sesame or olive oil

  • 1/4 cup liquid aminos (or 2 tablespoons soy sauce)


Add additional veggies such as carrots, celery and onions

Sesame seeds for topping


  1. Cook your rice according to the instructions on the box. Minute rice or 90-second microwave rice works! 1 uncooked cup will give you 4 cooked cups! I love my rice-cooker or instant pot for this!

  2. Cube up your chicken into bite-sized pieces and brown on a skillet using the oil of choice. Add any additional veggies you have chosen to add along with the frozen peas and corn. These will cook along with the chicken.

  3. After 8-10 minutes the chicken should be mostly cooked and definitely browning. Add your 4 cups of white rice and 4 eggs. Cover this mixture if possible until eggs start cooking

  4. Using a spatula, dice up the cooked egg and mix the entire skillet together giving it a fried rice appearance.

  5. Add sesame seeds if desired and serve. Makes 6 servings.
