EGG-xtra special recipes you will love!

Eggs are an amazing source of protein and healthy fat. Eggs also contain decent amounts of vitamin D, vitamin E, vitamin K, vitamin B6, calcium and zinc. Each egg contains an average of 77 calories and 5 grams of healthy fats. Eggs are also incredible versatile . I am going to share some of my favorite healthy new egg recipes for you to try!!

Spicy AvoToast


Sriracha Avo Toast

Ingredients

2 slices italian or french bread toasted

1 ripe avocado

2 eggs

coarse salt and pepper

Sriracha


Instructions

Place a non-stick frying pan over medium-low heat. Crack the eggs into the pan, season with salt and pepper and cover. Cook until the whites are cooked through and yolk is still runny.Meanwhile, mash half of the avocado with a fork. Season with salt. Spread half of the avocado mash onto each slice of toast. Then, place the eggs on top of each slice of toast. Drizzle each egg with Sriracha to taste. Serve.


 

These can be frozen and taken on the go!

Healthy Egg Bites

INGREDIENTS

nonstick cooking spray

2 large whole eggs

2 cups egg whites

1/4 teaspoon kosher salt

black pepper

3 strips cooked chopped turkey bacon

3 tablespoons thawed frozen spinach, drained

3 tbsp diced tomatoes

3 tbsp diced onion

3 tbsp diced bell pepper

2 oz shredded cheddar

INSTRUCTIONS

Preheat the oven to 350F. Spray the muffin tins with cooking spray. In a large bowl whisk the eggs, egg whites, season with salt and pepper.Mix in the remaining ingredients. Fill  and place tins on a cookie sheet and bake 20 to 25 minutes, until set.
