Double Chocolate Zucchini Muffins


Makes 12 muffins


  • 1 1/2 cup Oat flour

  • 1/2 cup Protein powder

  • 1/2 cup Cocoa powder

  • 1 1/2  teaspoon Baking powder

  • 1/2  teaspoon Baking soda

  • 1/2  teaspoon Salt

  • 1 Egg

  • 1 cup Greek yogurt

  • 1/3 cup Maple syrup

  • 2 small Zucchini

  • 1/2 cup Chocolate chip


  1. Preheat oven to 350 degrees. Line a muffin tin with parchment paper liners (or silicone liners sprayed with cooking spray for easiest release).

  2. Mix the dry ingredients together in a mixing bowl until combined. Add the wet ingredients and stir to combine. Grate zucchini and add to the bowl along with the chocolate chips. Stir until everything is combined.

  3. Using a measuring cup or large ice cream scoop, scoop even amounts of batter into each muffin tin. Bake 20-25 minutes, or until a toothpick comes out clean. Let cool and enjoy!
