Cauliflower Egg Salad

• 200 grams cauliflower cut in dime-sized cubes

• 6 hard boiled eggs

• 2 medium avocados diced

• 1 carrot, chopped

• 100 grams red onion diced or 1/2 cup

• 1 celery stalked, chopped

• 1 teaspoon smoked paprika

• 125 grams or 1/2 cup light mayo, vegan mayo, yogurt or hummus


Mix together and enjoy on a corn tortilla, lettuce wrap or all by itself.

Cauliflower can be steamed or raw depending on your preference.

Cauliflower rice can be used as well! Makes 3 servings.
